Nut Free Granola Recipe

This homemade granola will last you weeks and cost way less than any store bought.

Equipment

  • 1 pot
  • 1 medium mixing bowl
  • 1 cookie sheet
  • 1 silicone spatula

Ingredients
  

  • 3 C rolled oats
  • 1 C Coconut flakes
  • 1/2 C Pumpkin seeds
  • 1 Tbsp Cinnamon
  • 1/2 tsp Himalayan pink salt Any other salt can be substituted 1:1
  • 1 Tbsp coconut oil
  • 1 C Maple syrup
  • 1 tsp Vanilla extract
  • 1 C Chocolate chunks

Instructions
 

  • Preheat oven to 350 degrees
  • In medium mixing bowl, combine dry ingredients: oats, coconut flakes, pumpkin seeds, cinnamon, and salt.
    3 C rolled oats, 1 C Coconut flakes, 1/2 C Pumpkin seeds, 1 Tbsp Cinnamon, 1/2 tsp Himalayan pink salt
  • In pot on stovetop, melt and combine the coconut oil, maple syrup, and vanilla extract.
    1 Tbsp coconut oil, 1 C Maple syrup, 1 tsp Vanilla extract
  • Next pour melted contents over dry ingredients and mix to combine.
  • Once the dry ingredients are thoroughly coated, evenly spread mix over lined cookie sheet.
  • Place in 350 degree preheated oven and bake for 15 minutes.
  • Once finished, allow to cool completely.
  • After cooling, break up the granola to desired size and place back in mixing bowl.
  • Add chocolate chunks and gently fold them in
    1 C Chocolate chunks
  • Once all combined, store in airtight container of choice. I like to use 24 oz. wide mouth mason jars.
