Preheat oven to 350 degrees
In medium mixing bowl, combine dry ingredients: oats, coconut flakes, pumpkin seeds, cinnamon, and salt.
3 C rolled oats, 1 C Coconut flakes, 1/2 C Pumpkin seeds, 1 Tbsp Cinnamon, 1/2 tsp Himalayan pink salt
In pot on stovetop, melt and combine the coconut oil, maple syrup, and vanilla extract.
1 Tbsp coconut oil, 1 C Maple syrup, 1 tsp Vanilla extract
Next pour melted contents over dry ingredients and mix to combine.
Once the dry ingredients are thoroughly coated, evenly spread mix over lined cookie sheet.
Place in 350 degree preheated oven and bake for 15 minutes.
Once finished, allow to cool completely.
After cooling, break up the granola to desired size and place back in mixing bowl.
Add chocolate chunks and gently fold them in
1 C Chocolate chunks
Once all combined, store in airtight container of choice. I like to use 24 oz. wide mouth mason jars.
