This baked chicken recipe is my go-to for when I really, really, don’t want to put any effort into making dinner. Don’t worry about taking the time to thaw the chicken beforehand AND you only need 3 ingredients.

The versatility this chicken provides is endless. Use it as a main entree. Use it in a salad. I have used it in wraps that turned out delicious. Truly the possibilities are endless.

Sheet pan

Parchment paper OR silicone baking sheet (click the link)

Oven

Just 3 ingredients:

Boneless skinless chicken breast

Lemon pepper seasoning (My favorite)

Olive oil

Only 10 Steps to make Chicken When you Don’t Want to Cook

Preheat oven to 350 degrees.

Line baking sheet with parchment paper or silicone baking sheet like the one listed above.

Cookie sheet

Place FROZEN chicken 1-2 inches apart. Frozen is key when creating chicken recipe for when you don’t want to cook.

Drizzle olive oil over frozen chicken

Next, very generously season with your lemon pepper seasoning

Once the oven is preheated, place the sheet on a middle rack and cook for 40 minutes.

Be sure to check the internal temperatures and adjust cooking time if needed. The internal temperature of chicken needs to be 165 degrees. If it’s too cool, it is UNSAFE to eat. If it is too hot, the chicken will be too dry.

  • 1 Meat thermometer

Ingredients
  

  • 2 lbs. Chicken frozen
  • 2 tbsp olive oil organic extra virgin
  • 4 tbsp lemon pepper seasoning

Instructions
 

  • Preheat oven to 350 degrees.
  • Line baking sheet with parchment paper
  • Place frozen chicken on baking sheet 1-2 inches apart
    2 lbs. Chicken
  • Drizzle olive oil over frozen chicken breasts
    2 tbsp olive oil
  • Generously season with lemon pepper seasoning
    4 tbsp lemon pepper seasoning
  • Once oven is preheated, place sheet of chicken on middle rack.
  • Cook chicken for 40 minutes.
  • Periodically check internal temperature of chicken the last 10 minutes of baking
  • Internal temperature should be at least 165 degrees.
  • Adjust cooking time if needed.
  • Chicken is done when edges are slightly golden and crispy and the internal temperature has reached 165 degrees.
